In the middle of winter in Montauk, dining out is a challenge.

Of the approximately forty-five restaurants that are open in season, ten - not counting the pizza parlor, pancake houses and drive-in - remain open in January.

And those that are have to hoist a flag or otherwise distinguish themselves from the vast majority of shuttered establishments.
